Wagyu roast can be cooked the same way as a regular roast.
But here some useful tips to experiment with:
Some Japanese tips for a roast include the use of a tea to sprinkle the roast (just a teaspoon of it or less), black pepper, garlic, salt (best to use himalayan or kosher salt with Wagyu Beef), vegetable oil (Safflower oil is perfect for this as it has no smell of it’s own and doesn’t interfere with Wagyu natural flavor).
Japanese slice their roasts before cooking. They recommend this as they believe while cooking it whole it looses a lot of juices thus flavor becomes weaker. Whichever way you want to try to cook it, sliced or whole, you need to apply salt and pepper and leave it at room temperature until it adapts the room temperature and only then roast it. Mushrooms go really well with Wagyu if you fry them with salt and butter in the skillet first, carrots, and any your usual favorite vegetables you include normally.
The temperature your oven should be at 350 F. If you cook it whole use a thermostat and once temperature in the middle of the roast is 150 F take it out of the oven and cover with foil, leave it to settle for 15 minutes. If you cook it sliced, it will take much less cooking time. So keep your eye on it.
Using fresh chopped green onions on serving plate complements Wagyu roast very well. Red wine goes well with Wagyu roast, drink it or add a tablespoon of it to your roast prior cooking.
Main thing HAVE FUN doing it! Enjoy!
